Cook on medium heat until hot, about 30-40 minutes, then put the crockpot on low and let simmer for an hour. Serve in a mug with a cinnamon stick and a rosemary sprig garnish. Enjoy!<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Ben&#8217;s Sourdough<\/h1>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/berghahnbooks.com\/blog\/wp-content\/uploads\/2021\/01\/sourdough-768x1024.jpg\" alt=\"\" class=\"wp-image-15620\" width=\"512\" height=\"768\"\/><\/figure>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<p>250g active sourdough starter*<br>475g white bread flour<br>240ml water<br>10g salt<\/p>\n\n\n\n<p><strong>Equipment<\/strong><\/p>\n\n\n\n<p>Large bowl<br>Dutch oven or large oven proof pot<br>Banneton (proving basket)<\/p>\n\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n\n<p>Mix all ingredients together in a large bowl<\/p>\n\n\n\n<p>Wet hands and stretch and fold the dough,\nworking round the bowl and stretching\/folding in on itself in at least four\ndirections<\/p>\n\n\n\n<p>Cover and rest for 10 minutes. Then repeat\nthe stretch\/fold process. This should be done at least 3 times, and up to 7 if\ntime allows<\/p>\n\n\n\n<p>Cover and let the dough rest till it\ndoubles in size. Depending on temperate this can take anywhere between 2 to 6\nhours<\/p>\n\n\n\n<p>Prepare banneton with liberal dusting of\nflour to prevent sticking<\/p>\n\n\n\n<p>Tip dough onto well-floured work surface<\/p>\n\n\n\n<p>Shape into a ball using the stretch and\nfold method, bringing the edges into the centre to trap air and create a seam\nin the centre<\/p>\n\n\n\n<p>Gently place the dough in the banneton,\nseam side up<\/p>\n\n\n\n<p>Sprinkle with flour<\/p>\n\n\n\n<p>Cover and let the dough rest in the fridge\nfor 12 to 24 hours<\/p>\n\n\n\n<p>Preheat oven with Dutch oven inside to 230<sup>0<\/sup>C<\/p>\n\n\n\n<p>Transfer dough to greaseproof paper by\nplacing greaseproof paper on a chopping board, placing on top of the banneton\nand inverting, so the dough ends up seam side down on the paper<\/p>\n\n\n\n<p>Score the dough deeply with a sharp knife<\/p>\n\n\n\n<p>Remove Dutch oven and carefully place dough\non greaseproof paper inside<\/p>\n\n\n\n<p>Drop 3 or 4 ice-cubes under the paper<\/p>\n\n\n\n<p>Replace lid on Dutch oven and return to the\noven for 30 minutes<\/p>\n\n\n\n<p>Remove the lid after 30 minutes of cooking\nand cook for a further 20-25 minutes. Check near the end to bake crust to your\nliking<\/p>\n\n\n\n<p>Lift out of Dutch oven to cool on wire rack<\/p>\n\n\n\n<p>Enjoy first warm slice with butter after 20\nminutes of resting!<\/p>\n\n\n\n<p><em>* Active sour dough starter: if you do not already have a starter on the go, you will need to create one from scratch or find someone who will share theirs with you. <\/em><\/p>\n\n\n\n<p><em>Once you have your sourdough starter, in order to activate it for use you will need to feed it the day before. This involves weighing out the whole starter, then mixing it with its weight in white bread flour and water, so it triples in weight. Replace the original weight in your starter jar and return to the fridge. Leave the remainder in a separate jar and place somewhere warm till it doubles in size.
